My first food memory is pasta, very simple, with just oliveoil and cheese.I grew up in Tuscany, which is famous for dishes like polenta and cinghiale (wild boar) and tortellini in brodo (broth). My mother did the cooking and she was very good. It was always Italian, and she never really experimented with any other style. She cooked those Tuscan classics so beautifully.
For me, food is like music. As long as it’s well made, it’s all good to me.I travel a lot and love all sorts of food – good sashimi and sushi in Japan. I’ve been to India and I adore the food there, too. Italythough, is the place for me. It’s not just a matter of taste, it’s something than that. It may just be over-processed foods that don’t agree with me when I’m away. Any time I leave Italy, something weird happens to my digestive system. But Italian food is my one true love. There is nothing else.

I’m gluten intolerant, and for an Italian that’s quite funny.I did a blood test out of curiosity, to check for any intolerances, and found out I was sensitive to gluten! So now I avoid processed and genetically modified foods. When I’m home, I eat pasta and bread made from ancient grains (such as buckwheat, millet and quinoa) that contain no gluten. But when I’m on tour I simply cannot have pasta or bread at all, and I don’t drink any alcohol, either.
I’m not a picky person and I’ll eat pretty much everything.When I’m at the table I’ll devour whatever is given to me. There are certain foods, though, that I hated when I was little, like gorgonzola cheese, which I love today. I suppose it’s an adult taste.

The best times at the table are always the ones spent at home.My favourite thing to do in my free time is to be with my friends and cook. For me, it’s one of the most beautiful moments there are. If someone asks me, ‘When are you happy?’ I say it’s with food and friends at the table. My best friend makes the most delicious snails, and both my father (Andrea Bocelli) and I go crazy for them. We like to organise a big dinner with friends to enjoy them all together.
Pasta has always been my favourite thing to cook.I love its versatility. Right now, my favourite grain is Senatore Cappelli, but I also recently discovered a cereal called teff that originates from Ethiopia and Eritrea. It’s naturally gluten-free and it works incredibly well for pasta. It can be just pasta with olive oil and parmesan. But I also love to prepare the complicated sauces, like a slow-cooked ragù sauce. The famous one may come from Emilia-Romagna, but I’m from Tuscany, and our version is a little less elegant, a little rustic.

Last year, during Teatro del Silenzio, we had many guests travel to Italy for a week of concerts.After the final night, we couldn’t say goodbye without preparing a proper Italian meal, which included classics like pasta al pomodoro, pasta al pesto and focaccia. I invited everyone from Ed Sheeran, Johnny Depp and Jon Batiste to Lauren Daigle and Jaden Smith. It was definitely a memorable meal!

My comfort food is mymum’s cheesecake, whichshe makes for me everyyear on my birthday.I could eat it every day. Besides that, I love her chicken pizzaiola, with tomato sauce, mozzarella and capers.
Choosing my last supper is hard.But I made ribollita, that famous Tuscan soup, with some friends recently, from all the vegetables left in the garden. There were different types of cauliflower, and chard, as well as beans and bread. That’s the first course. Then I’d have polenta cinghiale, alongside tagliatelle with a special yellow wild mushroom. For pudding, chocolate soufflé with a scoop of ice cream.
